Gastronomy of Santarém

There are several typical and sweet dishes from our region. We share some here to get an idea of the richness of our gastronomy. The recipes presented here were translated by students and supervised by teachers involved in this Erasmus + project and in eTwinning projects.

Under this project, a cloth bag decorated with a new species that recently appeared in the Tagus river was created "Boga-de-boca-arqueda" also known as "Boga de Lisboa", with the aim of promoting its protection.

Campinos and Knights

Horses and bulls transformed the landscape and culture of Ribatejo and created the unique character of the countryside, guardian of the marshland and the animals that roam around it. As a young man and apprentice, he received the name of "anujeiro" and dedicated himself to the breeding of bulls, urging them to demonstrate their bravery in the Plaza de Toros, the ultimate place of their destiny and glory.

The task that pits the faithful campino against the unpredictable bull is an arduous one and the experience is built up over many years of traditional wisdom. Today, the campinos no longer sleep with the cattle, as they used to, but the duel between the bull and the man, which begins long before the arena, makes the campino the inseparable sentinel of the Ribatejo landscape.
Haughty on his horse, pole in hand, he reaches a mythical dimension with his characteristic clothing: dark jacket and shorts, a green cap or cap, red vest, white lacy socks and shoes with shelf heels. On his chest, he proudly displays a simple metal plate with the iron or coat of arms of the creator, the "ganadero", to whom he dedicates the love of his work and a lifetime.

This last nomadic rider of the plain is a genuine example of the environment to which he belongs and the same agility, dexterity and elegance is observed face to face, eye to eye, both in everyday life and in the typical dance of the region, the fandango.
